Hidden Springs Creamery is the realization of a long-held dream. Nearly thirty years ago, in a small Vermont restaurant, we imagined building a dairy farm that would produce artisan products of our own. Life took us in other directions for many years, including deep involvement with cooperatives that supported family farmers. Yet the dream never truly disappeared.

When the founding cheesemakers of Hidden Springs Creamery chose to retire, we were encouraged to carry the vision forward. With mentorship, dedication, and a passion for the craft, we embraced the opportunity. Today, we devote ourselves fully to nurturing the farm and creamery, each of us contributing our strengths—Travis overseeing farm operations, and Amy leading cheesemaking and customer relationships. Together, we share in marketing, sales, and market connections.

Hidden Springs is more than a creamery—it is a return to our roots as a family farm. Caring for animals and land has always been at the center of our lives, and we are grateful to live once again in this rhythm. Our children, though grown, remain connected, often returning to lend a hand with lambing and cheesemaking. Looking ahead, we remain committed to continuing Hidden Springs’ tradition of award-winning cheeses while introducing fresh ideas that reflect our family’s creativity and care.

Our philosophy has always been simple: farming should give back more than it takes. That belief shapes every decision we make, from how we manage our pastures to how we care for our flock.

Rather than working the land with aggressive tillage, we nurture it. No-till practices help us preserve vital soil structure, prevent erosion, and encourage rich organic matter to build naturally over time. This living soil supports thriving pastures filled with diverse grasses and legumes, exactly what our ewes need to stay healthy and produce exceptional milk.

During the warm Wisconsin summers, our sheep graze freely across our hillside pastures, where no herbicides or pesticides are ever used. This ensures a pure, natural environment for them and keeps our land teeming with beneficial insects, native plants, and vibrant microbial life beneath the surface.

In everything we do, from soil to solar, we’re guided by a deep respect for the natural systems that make our farm possible. At Hidden Springs, sustainability isn’t an end goal, it’s a continuous, living promise to care for our animals, our land, and our planet for generations to come.

Tours Offered

During the summer months we offer a cheese tasting experience with our lead Cheesemaker under our scenic outdoor pavilion. Following the tasting, participants get to witness "The running of the ewe's" and watch the sheep get milked.  A small on farm shop will be set up where cheeses and other sheep products can be purchased.
