Eclipse is the ash-ripened counterpart to Celeste, distinguished by its dramatic charcoal-colored rind and recognition as a 2026 American Cheese Society award winner. This lactic-set cow’s milk cheese is inspired by the traditional goat cheeses of France’s Loire Valley.
During production, the milk acidifies overnight to form a delicate curd. The curd is then hand-ladled into forms, drained for two days and transferred to the aging room. Each wheel is coated in edible vegetable ash, which moderates acidity while encouraging the development of beneficial yeasts and molds.
At two weeks, Eclipse has a slightly tangy flavor and velvety texture. As it approaches one month of age, the paste becomes softer and the flavor grows richer and more pronounced. It pairs beautifully with seeded crackers or crusty bread, finished with honey or fruit preserves.
Each small wheel weighs approximately 1/3 pounds and is sold in packages of two.
