Don Froylan Cotija is a firm, aged cow’s milk cheese with a pleasantly crumbly texture and a bold balance of salty, tangy and subtly nutty flavors. Made in Salem, Oregon, by the Ochoa family, it reflects generations of Mexican cheesemaking tradition. Don Froylan sources rich whole milk from Lochmead Dairy, a partnership that dates to 2004.

Because Cotija softens without melting, it retains its texture and savory bite when added to warm dishes. Crumble or grate it over elote, enchiladas, refried beans, tamales, chiles rellenos and esquites. It also brings a flavorful finishing touch to roasted squash, black beans, tostadas, pasta or a warm tortilla topped with salsa.

Ingredients: Pasteurized whole milk, cultures, enzymes and salt.
