Der Vauden Swiss is an Emmental-style cheese made from raw cow’s milk, rooted in a recipe passed down from the town of Vaud, Switzerland—the ancestral home of Goot Essa’s Amish family. This traditional heritage is reflected in both the cheesemaking approach and the balanced, expressive flavor of the finished cheese.
Aged for 12 months, Der Vauden Swiss develops a slightly firm, medium-bodied texture with a smooth, buttery mouthfeel. The cheese features small, numerous eyes typical of Emmental-style Swiss cheeses. Its flavor is mild and buttery at first, unfolding into a gently zesty bite with well-balanced acidity and subtle nutty notes that linger on the finish.
This natural-rind cheese offers an intense yet approachable Swiss character, making it equally appealing for slicing, melting, or enjoying on its own.
Der Vauden Swiss is made from cow’s milk and is available in 4 oz and 7 oz vacuum-sealed wedges, as well as a 12 lb wheel. With an approximate shelf life of three months, it is well suited for retail counters, cheese boards, and classic Swiss-style preparations.
