Der Weichen Gehl is a camembert-style, cow’s milk cheese aged for approximately 60 days. It has a supple texture that rolls easily across the palate, with a smooth, creamy consistency from rind to center.

The flavor is mild yet exceptionally buttery, with soft lingering notes of tangy cream. The edible bloomy rind is slightly nutty and gentle, well integrated into the rich, smooth paste.

Like all of GOOT ESSA’s soft-ripened cheeses, Der Weichen Gehl reflects the maker’s signature creamy texture with subtle notes of grass and earth, shaped by the character of cow’s milk. The interaction between the paste and the edible rind imparts complexity and depth of flavor, making the cheese especially well suited to lighter wines and light beers.

Produced as a 6 oz wheel and wrapped in cheese paper.
