Mountain Valley Sharp Cheddar is Goot Essa’s flagship aged cheddar, cave-aged for more than three years and widely regarded as one of the finest farmstead cheddars produced in the United States. Noted cheese expert Liz Thorpe has recognized it as one of the best examples of its kind, a testament to both craftsmanship and patience.
Aged for 36 months, this cheddar expresses a pure, classic cheddar character with depth and balance. The flavor is rich and creamy, unfolding into savory, softly sweet notes that are rounded by a confident but well-integrated sharpness. Its long-lasting, true cheddar bite lingers pleasantly, adding zest to meals and elevating wine and beverage pairings.
The texture is smooth and medium-bodied, with a semi-hard structure typical of well-aged white cheddars. Developed over years by Goot Essa’s cheesemaker, the flavor profile reflects a carefully refined combination of tradition, technique, and time.
Made from cow’s milk, Mountain Valley Sharp Cheddar is available in 4 oz and 8 oz vacuum-sealed blocks, as well as a 5 lb vacuum-sealed loaf. With a shelf life of approximately four months, it is well suited for retail counters, cheese boards, and serious cheddar lovers alike.
