Old German Weissa is a semi-soft, washed-curd, white Colby–style cheese made from cow’s milk. Based on a German-Swiss recipe, it is generally considered a household cheese, valued for its balance, versatility, and everyday appeal.

Hand-made by Goot Essa, Old German Weissa draws its inspiration from the Swiss Alps, the ancestral home of the Amish people. The cheese has a pale yellowish-white color and a medium-bodied texture with a smooth, gentle creaminess.

The flavor is straightforward and comforting, with notes of cream and butter, a touch of tang, and a long, silky finish. Old German Weissa is approachable yet expressive, making it well suited to simple presentations and regular enjoyment.

Available in 4 oz and 8 oz blocks, as well as a 5 lb loaf, and vacuum sealed for freshness.
