Dirt Lover is the signature cheese of Green Dirt Farm and a wonderful expression of our pastures, our sheep, and our commitment to thoughtful, place-based food. We set out to create a distinctly American original from sheep’s milk, one that could stand alongside classic bloomy-rind cheeses while telling the story of our farm in northwest Missouri.
Made with sheep’s milk, primarily from our pasture-raised flock, Dirt Lover is a soft ripened, bloomy rind cheese that reflects both the richness of sheep’s milk and the natural rhythms of the seasons. During the winter months, when our sheep are not in milk, we partner with another sheep dairy to continue production while maintaining the quality and character that define this cheese. Its exceptional quality has earned First Place in the American Originals category at the American Cheese Society every year since 2022.
A delicate layer of vegetable ash rests just beneath the snowy rind, a traditional cheesemaking technique that creates a striking visual line when the cheese is cut. This subtle detail highlights the craftsmanship behind each wheel and adds to the cheese’s distinctive appearance.
The texture is luxurious and evolving. The bloomy rind gives way to a silky, creamy interior that softens and becomes spoonable near the edge, with a custard-like center at peak ripeness.
The flavor is layered yet approachable. Notes of fresh cream and cultured butter give way to a savory, mushroomy depth from the rind, with a subtle earthiness and a lightly tangy, nutty finish. The result is balanced, clean, and deeply satisfying without ever becoming overpowering.
Dirt Lover is one of the few American bloomy rind cheeses made entirely from sheep’s milk on our farm and through trusted seasonal partnerships. It captures what makes our work unique: pasture-based dairying, careful craftsmanship, and a deep respect for the land that sustains it.
