Mount Bethel Blue represents a new chapter for Green Dirt Farm, expanding our cheesemaking into the world of blue cheese. Produced exclusively with milk from our own flock, this cheese reflects both the richness of sheep’s milk and the character of our land.

We have long wanted to feature a blue cheese, and the addition of our new aging systems in the Crossroads District near downtown Kansas City has made it possible to do so with precision and care.

Because Mount Bethel Blue is made only with milk from our farm, its availability is seasonal, generally offered from March through early January, following the natural rhythm of our flock’s milk production.

Artisanal sheep’s milk blue cheeses are rare in the United States, and Mount Bethel Blue stands apart for its balance and refinement. The naturally high butterfat of sheep’s milk creates a smooth, creamy body, while careful aging develops delicate blue veining throughout the interior.

The texture is supple and sliceable, becoming more luscious with time. Fine veins of blue create pockets of flavor without overwhelming the cheese's structure.

The flavor is layered and approachable. It begins with sweet cream and butter, followed by gentle blue notes that bring a touch of peppery spice and savory depth. The finish is clean and lingering, with a balanced salinity that enhances rather than dominates.

Aromatically, it is inviting and nuanced, with fresh dairy notes, subtle earthiness, and a soft blue character that avoids the sharp pungency often associated with blue cheeses.

Mount Bethel Blue showcases what sheep’s milk can achieve in a blue cheese, expressive, balanced, and crafted with intention from milk to cave.

Ingredients: Pasteurized sheep’s milk, salt, cultures, natural lamb rennet

Pairing Suggestions: Pairs beautifully with fortified and dessert wines, or bold reds like Cabernet Sauvignon. Also complements stouts and Belgian ales. Serve with honey, fig jam, fresh pears, or toasted nuts for a balanced and memorable pairing.
