Prairie Tomme is one of Green Dirt Farm’s most celebrated cheeses—a true expression of place, craft, and the potential of sheep’s milk in the American Midwest. Inspired by traditional European rustic mountain-style cheeses, Prairie Tomme was developed to showcase the depth and nuance of our pasture-based sheep’s milk in a natural, approachable form. Over time, it has grown into a flagship cheese for our farm, earning national recognition, including Third Place Best in Show at the American Cheese Society Awards.

Made in small batches using 100% sheep’s milk from our own Animal Welfare Approved® dairy, Prairie Tomme reflects the rhythms of our land in northwest Missouri. Our flock grazes on diverse grasses and forages, and that seasonal variation subtly shapes the milk, bringing complexity and character to every wheel. The cheese is carefully crafted and then aged to develop a natural rind, allowing native microflora in our aging rooms to play a role in its final expression.

The result is a firm, compact cheese with a supple, sliceable texture that becomes firmer and more crystalline with age. Its flavor is layered and evolving: at its core are rich notes of brown butter and toasted caramel, balanced by a gentle nuttiness and a hint of sweet cream. As it matures, subtle savory and earthy undertones emerge, along with a faint whisper of hay and pasture. The aroma is warm and inviting—milky and nutty, with just enough rustic character from the natural rind to remind you of its farmstead origins.

What makes Prairie Tomme truly unique is its balance. Sheep’s milk is naturally higher in butterfat and protein than cow’s milk, giving the cheese a luxurious mouthfeel and depth of flavor, yet Prairie Tomme remains remarkably approachable. It bridges the gap between rustic and refined, making it equally at home on a casual cheese board or in a more elevated culinary setting.
