Foxglove is a bold yet elegant double-cream, washed-rind cheese inspired by the great monastic and farmhouse cheeses of Europe, particularly the unapologetically aromatic style of Époisses. It was created for those who believe that aroma is not a warning, but an invitation.
From the beginning, Foxglove was designed to evolve. Young, it presents as a soft, supple cheese with structure and gentle give. With time and careful washing, it transforms—breaking down from the rind inward into a luxuriously runny, scoopable cheese that rewards patience and curiosity.
How It’s Made
Foxglove begins with rich, high-quality cow’s milk and extra cream, setting the stage for its signature indulgent texture. During aging, the rind is repeatedly washed with a mixture of yeast, salt, and beer. This living wash encourages the growth of surface cultures that give Foxglove its distinctive orange-hued rind and its deeply savory character.
The aging process lasts four to twelve weeks, during which the cheese undergoes a remarkable transformation. The paste softens, the aromas intensify, and the flavors deepen—creating a cheese that feels alive, expressive, and ever-changing.
Flavor Profile
- Young (4–6 weeks):
- Earthy and savory with gentle funk, hints of toasted grain, cultured butter, and damp cellar. The texture is soft and sliceable, with a creamy finish.
- Aged (8–12 weeks):
- Pungent, meaty, and complex. Notes of mushroom, cured meat, onion broth, and warm cream emerge as the interior becomes richly runny and spoonable. The flavor lingers with a balanced salinity and subtle bitterness from the washed rind.
