Trillium is the embodiment of quiet luxury—an homage to the timeless French classics Brie and Camembert, reimagined through the lens of American artisan cheesemaking. From the beginning, this cheese was crafted with one goal in mind: to create a triple-cream bloomy-rind cheese that feels indulgent yet balanced, refined yet deeply comforting.
Made with pasteurized cow’s milk and enriched with cream, Trillium is carefully shaped into elegant square formats and nurtured through a patient aging process. As it ripens, a soft, snowy-white bloomy rind forms on the exterior, protecting the transformation within. What begins as a structured, buttery paste slowly becomes silky and yielding—melting effortlessly on the palate.
