After studying in England, cheesemaker Keith Adams began producing cheese in late 2016.

Big McKinley (aka The Big McK) is a traditional british-style clothbound cheddar. Aged a minimum of 12 months and unmistakably Cheddar, there are subtle notes of tropical fruit, fresh grass, and tempered acidity.  Each wheel is wrapped in muslin cloth, coated, and aged on wood.

Made with Straus Family Creamery organic milk (Tresch Dairy East). Medium Cheddar sharpness, salt, hints of tropical fruit and fresh grass.

Ways to use / enjoy: Standing alone or myriad cooking applications.
