After studying in England, cheesemaker Keith Adams began producing cheese in late 2016.

Big McKinley (aka The Big McK) is a traditional british-style clothbound cheddar.

Aged a minimum of 24 months.  The Extra is dramatically different in flavor and texture than The Big McK ... rife with tyrosine crystals (the crunchy bits) and slightly sharper, the Extra also has a note of sweetness on the finish that balances everything out.

Each wheel is wrapped in muslin cloth, coated, and aged on wood.

Made with Straus Family Creamery organic milk (Tresch Dairy East).

Ways to use / enjoy: Standing alone or myriad cooking applications.
