The seeds of Cypress Grove were sown in the 1970s when Mary Keehn, a single mother of four daughters living in Humboldt County, began looking for a healthy source of milk for her family. As luck would have it, a neighbor had two goats. Possessing a background in biology, Mary's interest turned to breeding her goats, and within a few years, the size of the herd had increased significantly. Finding herself with excess goat milk, Mary started experimenting with cheese making. In 1983, with a regular customer base already developing, she officially founded Cypress Grove.
From the outset, Mary strove to make the highest quality, best-tasting artisanal cheeses. Market acceptance, however, was slow. Cypress Grove used this period of slow, steady growth to take special care of customers and to work with other goat cheese pioneers to develop the American market.
Today, renowned for its innovative range of fresh, aged, and ripened cheeses, Cypress Grove is a leader in the domestic goat cheese market and has been internationally awarded for the excellence of its products.
Cypress Grove's Creamery and Dairy reside in Humboldt County, just a 5.5 hour drive from San Francisco. Visitors are welcome at the creamery, though no tours are available. There's no tasting room or retail sales, but you can stop by and say "hi."

Midnight Moon
Edit Cheese (BETA)Aged six months or more, Midnight Moon is a blushing, ivory-colored goat cheese that’s nutty and brown buttery up front with a long caramel finish. Similar to a Gouda, as Midnight Moon ages, protein crystals form and lend a slight crunch to the otherwise dense and smooth cheese. Know someone who (gasp!) doesn’t like goat cheese? Encourage them to dip their toes back in the water with Midnight Moon, which has been known to convert even the staunchest of goat cheese critics.

Lamb Chopper
Edit Cheese (BETA)Lamb Chopper is Cypress Grove’s only sheep milk cheese, but that’s not its only claim to fame. Lamb Chopper has a buttery color, smooth texture, and is mild on the palate, but don’t equate “mild” with “lack of complexity” — this is a nutty, subtly sweet cheese that’s semi-firm and meltable, thanks to the higher fat in sheep milk. Aged three months, Lamb Chopper is a real crowd pleaser and a favorite with kids — some might even call it the “type O” cheese.

Little Giant
Edit Cheese (BETA)Smooth, buttery, and delicate — Little Giant is a bright and fudgy goat cheese that makes a big impact in a tiny package. With subtly sweet, yeast-like flavors of bread fresh out of the oven and mushroomy notes that intensify as the cheese matures, this little goat cheese is mild and delectable at any age. Little Giant has a downy-white, edible rind (kinda like a brie), and like other bloomy cheeses, it continues to ripen from the outside in as it ages.

Fog Lights
Edit Cheese (BETA)Fog Lights brings new depth and complexity to the Humboldt Fog family of cheeses. This dense and fudgy little goat cheese is ash covered and mold ripened, and like other soft-ripened cheeses, it continues to ripen from the outside in as it ages. Whether you’re driving along the redwood coast or taking a walk along a Pacific beach, when the forecast calls for fog, there’s no better way to cut through the darkness than with the brightness of Fog Lights.

Bermuda Triangle
Edit Cheese (BETA)Bermuda Triangle is tart and tangy with intense pepper notes and is the perfect goat cheese for any rind lover! Thanks to its shape, Bermuda Triangle ripens faster than their other soft-ripened cheeses, developing an umami brothiness with incredible depth of flavor. When sliced thinly with a wire, Bermuda Triangle creates a stunning and distinctive presentation that brings the “wow” factor to any table. No compass require
Pairing recommendations: Bake sliced Bermuda Triangle with wild mushrooms, fresh herbs, and breadcrumbs. Serve with sliced baguette. Serve with spicy nuts and candied fruit as a standout addition to a cheese board.

If you love Humboldt Fog and can’t get enough of truffles, this is the cheese for you. Like other soft-ripened cheeses, Truffle Tremor has a bloomy rind that allows the cheese to ripen from the outside in. As Truffle Tremor continues to ripen and mature, the creamline develops and the flavor intensifies — an ooey-gooey, ripe Truffle Tremor is not for the faint of heart.

Humboldt Fog
Edit Cheese (BETA)Humboldt Fog was conceived in a dream (yes, really!) by Cypress Grove’s founder, Mary Keehn. She had a vision of a bloomy white cheese with a ribbon through the center and knew it was called “Humboldt Fog.” Each handcrafted wheel features a distinctive ribbon of edible vegetable ash. You'll enjoy buttermilk and fresh cream, complemented with floral notes, herbaceous overtones, and a clean citrus finish. As Humboldt Fog matures, the creamline develops and the flavor intensifies.
Ways to use /enjoy pairing recommendations: Drizzle with honey and serve with prosciutto, tart apple, and Marcona almonds. Crumble atop mixed baby greens with a vinaigrette and roasted beets.
