MouCo Camembert is the signature soft-ripened cheese from MouCo Cheese Company and has been at the heart of the creamery since 2001. Rooted in Bavarian cheesemaking traditions passed down through Birgit and her father, it is reimagined with the bold spirit and local milk of Colorado.

When MouCo began, soft-ripened cheeses like Brie and Camembert were nearly invisible in the U.S. market. Choosing Camembert as the first wheel was a natural starting point—creamy, nuanced, and never rushed. It became the foundation for blending European tradition with Colorado milk and intention, shaping every award-winning cheese that followed.

Each wheel is made with fresh local cow’s milk and time-honored technique, without preservatives or stabilizers. The cheese is soft and slow-ripened, allowing a natural bloomy rind to develop and evolve over time. Young, it is firm with a bright tang; with age, it softens into a gooey, buttery core with nutty, earthy character.
