ColoRouge grew out of a simple question: could MouCo create a washed-rind cheese that was bold, beautiful, and truly its own? Built on years of fermentation craft—spanning bread, beer, wine, and cheese—the rind is alive with cultures working together in symbiosis, shaping the texture, aroma, and rhythm of ripening.

What began as an experiment has become one of MouCo’s most award-winning cheeses and a clear expression of Colorado fermentation. The goal is complexity without domination—nuanced, balanced, and expressive without overwhelming its surroundings.
