We’re Scott and Andrea Robbins. We started Urban Stead Cheese as a way to create a great local product that had a sense of community. That’s why we create our cheese with milk from an Ohio Valley farmer. Our leftover whey from cheesemaking is then used to feed another local farmer’s livestock. The cheese we make on site every morning is sold in our retail space, and at local restaurants and shops. All the while, we cater and find ourselves at events all around Cincinnati. It’s a cycle that repeats itself over and over, and creates cheddar for the better. 

A guiding principle throughout this process has been to do this with as small of a footprint as possible, and to contribute to the betterment of our city while doing so. That’s why we decided to renovate a building that had sat vacant for a decade, and are thrilled to be at the center of the revival of the Evanston, East Walnut Hills & Walnut Hills neighborhoods. It’s our little slice of cinderblock paradise.

An Urban Stead version of a Kentucky-style Beer Cheese. Quark is the base for our beer cheese; we combine Braxton Brewing Co. Storm Golden Cream Ale with our proprietary blend for this highly-addictive and spreadable beer cheese. The end result is a super creamy beer cheese spread that will have customers coming back for more time and again.

Caring for your Beer Cheese: Keep cheese stored in cold refrigerator near back. Keep in airtight container. Remove from cold at least half an hour before serving.

Pairings: Tempranillo, Dry Riesling, Garnacha Pilsner, Lager, Pale Ale

Serving Suggestions: Pretzels, soft or crunchy! Base of flatbread/pizza

This fresh-tasting elegant alpine-style cheese is mild and nutty, with subtleties of fresh straw and a hint of mustard on the finish. This cheese is perfect for a cheese board, but is also a great melting cheese, similar to a gruyère cheese. Tomme is typically named for the place in which it is made, thus we’ve given a nod to the neighborhood where we’ve laid our roots with this cheese.  Aged 6-12 months.
