Mountain Priory Cheese is an artisanal cheese hand-made by the nuns at their cloistered convent in the Tehachapi Mountains. Their raw cow’s milk cheese, aged and firm, is based on a recipe made by one of the original five nuns at their priory. That recipe is based on one created in the 12th century by the French monks of their order, as it was written in the First Statues of the Norbertine Order.
